  • Sweet Potato Casserole

    Howdy,

Depending upon how well you stock your camping kitchen, depends upon the individual camper, I believe in a well stocked field kitchen and that a man's place when camping is in the kitchen, cooking and cleaning pots & pans. This allows the wife time for herself, unless she loves to outdoor cook as well, then you might say that you have something in common with your wife. If she enjoys outdoor cooking then make sure you enjoy cleaning the pots and pans. No woman enjoys cleaning so take that responsibility on with joy in your heart to make every camping trip an enjoyable past-time and one with which you will enjoy while you are physically fit for camping. Camping is to be enjoyed by all, not just the man.

Here's a simple casserole that I sometimes make and even enjoy warmed over the next day.

    3 cups sweet potatoes, mashed
    1/3 cup milk
    1/2 cup butter
    1 cup white sugar
    2 eggs(brown), slightly beaten
    1 teaspoon vanilla

Mix and pour into buttered casserole. Top with the mixture below.

    1 cup brown sugar
    1/2 cup plain flour
    1/3 cup butter, melted
    1 cup nuts, finely chopped

Mix topping with fork and sprinkle crumbs on top of casserole. Bake over direct heat in a covered grill at 300 to 350 degrees for 40 to 45 minutes.
