  • One pot meals.

    Do you have a favorite one pot meal for camping? I picked up a 5 qt Dutch oven last year. The thing I like about it, is you can use the lid as a skillet. So I have been experimenting with one pot meals.
    I have been doing a modified version of my baked ziti. Last night I made chili Mac and beef which was really good. I also got stuff to make SOPP. Sausage, onion, peppers and potatoes. Basically just pan fry everything in a pot.

    Do you have a favorite one pot meal you would like to share?

    My family picked up a recipe for Red Raven Hash from a visit to Fort Lincoln in North Dakota when I was a kid. My parents have since lost the hard copy, and I haven't been able to find it anywhere since I started looking for it a few years ago, so I have to go by memory. The closest thing online is Red Flannel Hash.

    Main difference then most Hashes is hamburger instead of corned beef.

    Hamburger, Onions, Potatoes, Beets, seasoning to taste, then scrambled eggs to finish. When camping I usually use canned beats and potatoes rather then fresh, cooks up quicker.

        Now keep in mind I make my gumbo at home and freeze it to take camping but boy oh boy I could have the entire campground smelling up good good good with this version:

        Chicken and Andouille Sausage Gumbo

        serves 4

        6 ounces andouille sausage, chopped
        2 TBs butter
        2 TBs oil
        1/3 cup flour
        1/2 lb skinless, boneless chicken thighs, cut into bite-sized pieces
        1 cup chopped onion
        3/4 cup chopped green bell pepper (about 1 medium)
        1/2 cup thin sliced celery
        1 TB Cajun/Creole seasoning
        1/4 teaspoon salt
        5 garlic cloves, thin chopped
        3 cups chicken stock/broth
        1 -14.5-ounce can whole tomatoes, drained and hand crushed
        1 cup frozen cut okra
        3 cups already cooked rice



        Heat a Dutch oven over medium-high heat. Add sausage to pan; sauté for 5 minutes, turning to brown on all sides. Remove sausage from pan using a slotted spoon, and drain on paper towels. Melt butter in drippings in pan. Add oil to pan; swirl. Stir flour into butter mixture; cook until flour mixture starts to brown, stirring constantly with a whisk or fork. Add chicken; saute 4 minutes, stirring frequently. Add onion and next 5 ingredients (through garlic) to pan; sauté for 6 minutes or until vegetables are tender, stirring occasionally. Add stock and tomatoes to pan; bring to a boil. Return sausage to pan; stir in okra. Reduce heat, and simmer 6 minutes, stirring occasionally. Serve over rice.

        Were it me, I'd cook the rice at home, bag it and heat it in some foil at the edge of the fire. Another option is to buy pre cooked rice and heat it up the same way.

          Beef w/ Simmered Cabbage

          serves 4


          2 TBs peanut oil
          1 cup thin sliced onions or shallots(about 1 meduim onion or 4-5 shallots)
          1 tsp salt
          1-1/2 tsp turmeric
          1/2 tsp ground red pepper (if you like spicy food add 1/4 tsp red pepper flakes)
          1 lb ground sirloin
          4 cups finely shredded cabbage (about 1 small head)
          3 plum tomatoes cut into thin wedges
          1/3 cup coarsely chopped dry-roasted peanuts (preferably unsalted)



          Heat Dutch oven over medium heat. Add peanut oil to pan, and swirl to coat. Add onions or shallots, salt, turmeric, and red pepper; cook for 3 minutes or until shallots are tender, stirring frequently. Add beef; cook for 2 minutes or until the beef begins to brown. Add cabbage and tomato; toss well to combine. Reduce heat to medium-low; cover and cook for 10 minutes or until cabbage wilts. Stir in peanuts; cover and cook 10 minutes or until cabbage is tender.

          Dole sells a nice product in the refrigerated produce section: shredded red or green cabbage. which would work for this dish.

            When camping alone I often go for pot-less meals;
            heated in the can; Hormel chili with beans and great value (wallymart) stew (sometimes over rice or/with rice pilaf but that makes a pot to clean).

            Pre-nuked (way quicker than simply baking them in the coals) taters in foil warmed in the campfire coals are a perennial favorite.

            Does an easy to clean campfire grill count as a pot?
            Steaks or burgers &/or hotdogs/chilidogs grilled over campfire coals are good...
            The lowly hot dog can be a part of an excellent condiment sandwich as anyone from the Chicago area can verify.

            French fries can be a one pot camp stove item...(difficult to keep from catching fire over a campfire).
            Preheat oil with a few drops of water in it until the water boils off, add item to be deep fried. This takes some practice as adding items to be fried cools the oil. You need to keep the oil hot enough to fry without (hopefully) over heating the oil (causes it to turn brown)... be careful the oil will foam and splatter while frying the items.F
            Food will float when done/nearly done.
            Use a wire scoop to remove the items (be careful French fried fingers are quite painful).
            Be aware that deep fat frying can splatter grease around the area (do this away from vehicles chairs tents etc.) and if inexperienced keep a fire extinguisher handy, don't fill the pot more than about half way with grease/oil... constant attendance/attention is a must.


            Pie iron (likely counts as a pot) over a campfire food can be quick and easy; grilled cheese/cheese & egg or other hot sandwiches, fruit filled deserts etc..


            How about popcorn?...Needs a large pan with a lid, works best when you can support the pan with a stove or fixed grill).
            Barely cover the bottom of the pan with oil, throw in a couple of kernels.
            Heat (medium to medium high) until they pop throw in enough popcorn to cover the bottom of the pan and continue to heat wile constantly shaking...(you will likely use too much popcorn the first couple of times).
            when it stops popping immediately dump in a (preferably large paper shopping) bag.
            melt some butter several tea/ table spoons (depending on the amount of popcorn) and slowly poor into the bag while some one shakes it.
            Salt to taste.

            Experience along with properly set up 4WD will get you to & through places (on existing, approved 4WD trails) that 4WD, alone, can't get to.

              Just took a look at your chili mac and cheese recipe and the man is salivating, LOL. Reminded him that cheese is considered poison by his DGD so he'll have to wait until an adult only trip.

                          I hear you on anticipating better weather's fun. It's why I start filling the freezer with next summer's dishes and planning out the overall menu. Makes the warmer weather seem closer.

                            I've had this basic rule for most of my adult life:

                            One pot or pan per person eating. As I usually camp alone, pretty much all my cooking is one pot or pan.

                            I tend to stick with the basics: burgers, dogs, spaghetti, chili, soup, tacos, burritos, pizza (I have an oven in the clipper).

                            One thing I try to do is coordinate my "meat" (i'm a veggie, so I use soy alternatives) throughout the trip. So if i'm having tacos, i'll also have spaghetti - that way a lb of "hamburger" will go for both meals and I have no leftovers.

                            I do the same with vegetables - coordinate them between meals so I don't have leftovers.

                              Nice! That is some serious commitment! I camped in November (for a deer hunting trip) in AR and it got down around 35 or so. I was on a blow up mattress and had no idea that thing was sucking the warmth right out of me until I got on this site. Also only had two summer sleeping bags to use. I slept in about two layers of clothes and woke up all night not knowing if I was sweating or just cold. I know that sounds weird but that is about the only way I could describe the misery. HOWEVER, I woke up and killed a nice 8 pt that very next morning and had a blast camping with family so the struggles were worth it!
