Looking for a secluded hiking an camping trail in upstate ny

Hi,
My friend and I are looking for a mountain in upstate New York which has a trail. We would also like to be able to camp on the mountain but not on the trail (off the trail sort of, just not in a camping ground). Sort of like what nunfancy does in some of his winter camping videos. Anyway I was thinking of the adirondacks but I don't really know if what I am looking for is allowed. Does anyone have any suggesions? Thanks,

The tounge mountain range in Lake George is a good place to start. You can either stay in a lean-to or camp off trail.
